I am currently changing from iTunes to Media Monkey as my default media player.

I've always used AMIP's Title Bar Integration to show this line: NP: (%itpc) $if2($mat(%itrt,20),+)$if2($mat(%itrt,40),++)$if2($mat(%itrt,60),+++)$if2($mat(%itrt,80),++++)$if2($mat(%itrt,100),+++++) %1 - %2 (%mil:%sel)

The %itpc and %itrt are iTunes specific (playcount and rating.)

Is it possible to change these variables to get the playcount and ratings from Media Monkey instead?

I am using MM 3.0.2.1129

Do you mean it is impossible to extract this from MM for AMIP? Since MM does have ratings and last played content for all tracks.

AMIP works in Winamp plug-in mode and has no access to the advanced API.
